Baked Baby Back Ribs Recipe | Cuban Confusion

There's not much better than baby back rib meat falling off the bone, especially if it's falling off without even touching it. Ribs can be a healthy and filling option too! Usually, it's the BBQ sauce that packs a barbecue dish with the unhealthier ingredients like sugar, salt, etc.

I used a Homemade Whole30 Approved Mango BBQ Sauce to coat these ribs since I'm doing the diet and most BBQ sauces contain sugars and other banned ingredients.

Directions:

  1. Remove the silver skin/fat membrane on the underside of the ribs. This isn't required, especially if cooking in an oven, but I believe it helps add flavor from the seasoning. If using a grill or smoker, you'll definitely want to remove this membrane as it allows the smoke to penetrate the meat from the underside.

  2. Coat your ribs in seasoning, brine, or marinade (etc.) and let sit in the refrigerator (covered) overnight (at the least).

  3. Heat oven on Bake to 225 F and put the ribs on a baking sheet or roasting pan (**If you brined the ribs, leave them in the roasting pan with the brine), cover with a layer of parchment paper and then tinfoil, and into the oven we go. Let cook covered for ~2 hours.

  4. At the 2-hour mark, take the ribs out of the oven and remove the tinfoil. Brush the BBQ sauce all over the ribs and put back in the oven, uncovered.

  5. Baste/cover with BBQ sauce every 15 - 30 minutes for one and a half hours. The amount of time between each sauce coating really depends on the sauce. The idea is to add more sauce as you see it begin to dry or crust. The sugars in the sauce will create a nice layer coating outside of your ribs.

  6. When the top layer of the ribs begins to look "done" turn on the Broiler to High and let char up for about 5 minutes. Watch it - don't let it burn!

  7. Remove ribs and let rest under a tinfoil tent for 15 minutes.

  8. Enjoy!
