How to Make Cauliflower Rice

Cauliflower rice can be a tasty, healthy alternative to grain rice or quinoa. I'm currently doing the Whole30 diet and grains are a banned ingredient. I've found Cauliflower Rice to be exactly the substitute I need to feel like I'm eating a "normal" meal.

Best part about it, it's super easy and takes almost no time!

Ingredients (LOL):

- Cauliflower!

Directions:

1. Grate up your Cauliflower! I used the larger holes on a box grater, as you can see in the image above. It's easiest to do this on a cookie sheet or roasting pan. Tip: Cut the cauliflower into quarters to make it easier - Otherwise, the cauliflower will break apart and fall off as you grate ).

You can also you a food processor (just be careful and don't over-process).

2, Heat up a pan with oil over medium heat.

3. Dry out your shredded cauliflower. I just lay out a double layer of paper towels long enough to fit a thin layer of cauliflower rice. Pour rice and flatten onto the paper towel. Take another double layer of paper towels and press down on the top side of the rice. This will help absorb the water from the cauliflower.

4. When the pan is hot enough and you feel the cauliflower is dry enough (don't sweat it, not a huge deal), then add to the pan. Season with sales & pepper to taste.

5. Sautée the cauliflower until tender. Be sure to stir occasionally so it doesn't burn. My goal is typically to see about 10% of the rice have minor brown spots on it. Also, you can taste and feel the rice to ensure it's got the right doneness for you.
