Whole30 Approved Mojo Ropa Vieja Recipe

The easiest way to make this is using a slow cooker. The directions below pertain to a slow cooker such as a Crockpot.
Ingredients:
Beef roast (rump roast, etc.)
Lemon
Lime
Orange
Onion
Bell Peppers
Jalapeño
Garlic
Tomato
Yucca
Large carrot
Green olives
Tomato paste
Salt
Pepper
Garlic powder
Onion powder
Smoked Paprika
Cayenne
Chili powder
Dried Basil
Dried Parsley
Dried Oregano
Dried AND fresh Cilantro (we'll use the fresh stuff at the end)
Bay leaf
Beef broth
Directions:
Turn on the slow cooker to low heat. We're going to go low and slow on this baby for ~8 hours.
Season your roast on all sides with all of the dry spices (not the herbs). If there is a fat cap on one end, you can season that too.
Heat Avocado Oil in a pan over medium-medium-high heat (between medium and medium-high). Add a little bit of the oil to your slow cooker too.
Chop your veggies, slice the olives and cut your citrus in half. Peel and chop the carrot and yucca into little half-coin shaped pieces.
When hot enough, add the roast to the pan and brown on all sides - typically 2 minutes per side (keep in mind, it tends to heat up as you continue to cook).
Once browned, put the roast in the slow cooker, along with the rest of the ingredients (minus the veggies). Squeeze the citrus juices in and for a little extra flavoring, throw in some olive juice!
Sauté the onion, garlic, and peppers in the same pan without cleaning out the beef renderings. If necessary, at a little bit more oil. You'll want to see a nice browning on the edges of the peppers, so make sure the pan is hot enough. (~5 minutes).
Add veggies to the slow cooker, mix in with the pot.
Add water if necessary to get liquid near the top of the beef.
After the beef is done (~8 hours), remove from the slow cooker and place into a large bowl or pan and shred away. A neat little trick, if you place in a bowl, is using a hand mixer to quickly shred the meat. This would work with any type of meat!
